Thanks for sharing this wonderful article on plant based eggs around the world. I would like to add that one of the biggest barrier of entry for Eggs is Nature. Shelled Eggs are very versatile and are able to do pretty much everything and anything in the kitchen.

The development in plant based eggs is still very nascent, with many products rather lacking in taste, performance and function. Cost is another challenge which is becoming increasingly difficult due to cold chain.

Looking forward to reading more articles on other alternative proteins.
